The following is a detailed list of mucus-forming foods. First is an excerpt from Arnold Ehret’s Mucusless Diet Healing System followed by a contemporary commentary from the new eBook Spira Speaks: Dialogs and Essays on the Mucusless Diet Healing System. Please keep in mind that the Mucusless Diet as a Healing System does not mean that you simply stop eating these foods. LESSON XXI (Excerpt from Arnold Ehret’s Mucusless Diet Healing System)

You have now learned that total abstinence from food—FASTING—is the best and most effective method of healing. This proves with logical consequence how small a quantity is in fact necessary to sustain life and justifies my oft-repeated statement, “The wonder is that we live in spite of our excessive eating, in spite of our eating such wrong, destructive foods.” In this light of truth it almost appears ridiculous to note the endless fight and confusion regarding dietetics, protein, mineral salts, vitamins  etc. The potential food value is not the first question at all. You cannot heal drunkenness by water without stopping the intake of alcohol. You cannot heal disease thru any kind of adjustments, treatments or diets, without stopping the eating of the foods which produce disease, the latter being 90% of the present day destructive diet of civilization.

I named the natural food of man, fruits and starchless greenleaf vegetables (as it is said in Genesis, “fruits and herbs”) “Mucusless Diet,” because mucus is the main and important and significant substance, while the other, wrong foods, contain, produce and encumber the human body with the matter of disease.

The entire “trash” of scientific dietetics, food values, statistics, etc., are useless and in vain as long as the first step is not taken, and that is to see the foods and their value from a principally different angle:

1. How far and how much they produce and leave disease matter (mucus) in the body.

2. Their dissolving, eliminating, healing properties.

For this purpose I give you a special critique of the different foods, wrong foods especially, and you can see at once why they are “destructive” with no positive food value at all, but producing and leaving stored up waste in the body. . . 


            All are in a decomposing state, producing cadaver poisons, uric acid in the body and mucus; fats are the worst, even butter is unusable for the human body. No animals eat fat.


            Eggs are even worse than meats, because not only have eggs too high protein qualities, but they contain a gluey property much worse than meat and are therefore very constipating, quite more so than meat. Hard boiled eggs are less harmful, because the gluey qualities are destroyed; the white of eggs makes a very perfect glue.


            Also makes a good glue for painting. Cow’s milk is too rich for adults and for babies, and plainly destructive. A baby’s stomach cannot digest what a calf can. If milk must be used then add at least half water and some milk sugar. Sour milk and butter­milk are less harmful and possess some laxative qualities; the gluey sticky properties disappear. Cottage cheese with stewed fruit (see Lesson 15) is good for transition diet. All other kinds of cheese are highly acid and are mucus formers.


            All fats are acid forming, even those of vegetable origin, and are not used by the body. You will like, crave and use them only as long as you can still see mucus in the “magic mirror.” What doctors call heat calories is caused by the fats in friction, obstruction in the circulation; they constipate the small blood vessels.


            Cereals and all flour products form mucus and acid. The worst of all is white flour, because it makes the best paste. Bran, graham, whole wheat or rye bread are less harmful, because they have lost their sticky properties. When well done or toasted and well baked they are much less harmful. Raw cereals, if toasted, are to some extent a mucus broom, but contain stimulants, wrongly believed to be “food value” [nutritious]. Pies made of rough unbaked dough, are, according to my belief, absurd. When eaten with sweets and acids they are mucus and gas producers the same as French pastry.


            Lentils, dried beans and dried peas are too rich in protein, the same as meat and eggs. The peanut is a legume also.


            A little better than flour products, because they contain more mineral salts (see Berg’s tables), nor do they make a good, sticky paste. Sweet potatoes come close to natural sweets, but are too rich. Well fried, or crusty, baked like Saratoga chips, but without the animal grease, sweet potatoes are almost mucusless.


            Is one of the greatest mucus formers and makes an excellent paste. I firmly believe thru my experience with serious cases of sickness (awful boils, etc.) prevalent among one-sided rice eaters, that rice is the foundational cause of leprosy, that terrible pestilence.


            All nuts are too rich in protein and fat and should be eaten only in winter, and then only sparingly.  Nuts should be chewed together with some dried sweet fruits or honey, never with juicy fruits, because water and fat do not mix.

With the possible exception of nuts, the above represent about all of the foods which have to be prepared in some manner for eating; in fact they are tasteless unless specially prepared.  What civilized man calls good to eat, delicious taste, is absurd. If the tongue is clean from mucus, and the nose for the first time free from dirty filth, both then become in fact “magic mirrors,” “revelation organs,” we may call them, the bridge of the sixth sense, that is, to sense the truth. You lose all desire for, and in fact cannot stand these stimulating spices, especially table salt, any longer. All of these unnatural foods are extremely bitter, and in fact for a normal nose they possess an offensive odor. The sense organs of man are in a pathological state embodied in a “pus-like” mucus and waste the same as the entire system, and being in a partly decayed condition themselves, they find this half rotten food palatable.

Even then you would and could not eat fats or animal foods without the cook’s “preparation,” that is, the art to cover the real taste and odor by spices and dressings. In fact taste and small vibrations are so far changed from the normal natural, that the heavy meat eater does not like the wonderful odor of a ripe banana. He prefers “haut gout,” a French word meaning “the smell of half-decayed meat.”

No scientific food value tables will convince you of the truth. You must sense it with your cleansed organs, how wrongly you are fooled into believing that you nourish and build up health and efficiency by these foods which are in reality destructive, because they stimulate, or more truthfully, stop the elimination of your old waste until the day of reckoning comes, when you are “officially” sick.

Paradoxically but true, civilized men starve to death thru ten times too much overeating of wrong, destructive foods; the “sack” (stomach) of digestion is enlarged and sunken, prolapsed, which condition dislocates and interferes with the proper functioning of the other organs. Its gland and pores of the walls are totally constipated and its elasticity as well as that of the intestines, with its vital function almost paralyzed. The abdomen is an abnormally enlarged sack of fatty, watery, dislocated organs thru which half or even more of the decayed foods of civilization slide, fermenting more and more into feces such as no animal has, and this is called digestion!

Food Categories

Mucus Forming Foods:

Meat, Poultry, Dairy, Grains, & Starches:

Meat, poultry, and dairy are the most dangerous mucus formers and should be avoided from the beginning. I used certain grains and starches, such as well-toasted 100% sprouted wheat bread and 100% wheat spaghetti as early transitional mucuses, i.e. mucuslean options.

Mucusless (mucus-free) Foods:

Starchless/Fatless Fruits and Green-Leafy Vegetables

Deceptive Mucus Formers:

Here is a list of foods that many people do not realize create mucus:

  • Rice (great for creating glue to bind books, bad for the transition)
  • Avocados (fatty item that may be used on the transition, but is highly addictive. Although technically a fruit, if it is used it is best to combine it with a combination salad or vegetables to aid elimination. However, it is recommended to stay away from them if you are already not stuck to them.)
  • Nuts (Mucus-forming, but may be used on the transition. It is best to eat with dried fruits like raisins to aid with elimination)
  • Plantains (starchy)
  • Tofu (slimy and mucus-forming)
  • All Soy Products (processed, unnatural, and mucus-forming)
  • Nut milks (mucus-forming and constipating. Although they may be used in the beginning of the transition, they should be eliminated as soon as possible.)
  • Un-ripened fruits like green bananas (the riper the fruit you eat the better)
  • Corn (it does not eliminate well. When cooked, it gets all mushy in the intestines)
  • Corn chips (some people use it on the transition, but they are very addictive and do not eliminate well)
  • Beans (they are starchy and mucus-forming. But, they may be used sparingly on the transition within close proximity to green-leafy salads)

Fatty Fruits and Ehret’s Nut Contradiction–Although avocados are not addressed specifically by Ehret–as they did not become a prevalent salad item until the 1950s–Ehret’s discussion about nuts can help us to understand the mucus-forming nature of avocados. With that said, the Mucusless Diet actually does contradict itself regarding nuts. Ehret writes: “Other kinds of grated nuts, or nut butter may be served once in a while for this purpose, but are too rich in protein and will produce, if continually used, mucus and uric acid (Trans. Diet pt. II).” In another section, he explains “All nuts are too rich in protein and fat and should be eaten only in winter, and then only sparingly. Nuts should be chewed together with some dried sweet fruits or honey, never with juicy fruits, because water and fat do not mix. With the possible exception of nuts, the above represent about all of the foods which have to be prepared in some manner for eating; in fact they are tasteless unless specially prepared (Destructive Diet of Civilization).”

The contradiction arises when Ehret asserts “all fruits, raw or cooked; also nuts and green-leaf vegetables are mucus-free (MDHS; Confusion in Dietetics).” To be clear, nuts are mucus-forming. But why was this statement made? There are several explanations for this, but the two main ones are that 1) in comparison with meat, nuts are virtually mucus-free, and 2) that Ehret’s editor Fred Hirsch took editorial liberties during the assemblage of the book as we know it and may be responsible for the mishap. Many of these changes, or contributions, can be easily identified. The greatest example might be in the section “Vegetarian Recipes,” whereby the editor, obviously Hirsch, explains why he added the mucus-lean menus, although Ehret resisted requests to do so.

Ehret ultimately asserts that

fats of any kind, including the ordinary butter, are unnatural and therefore should not be eaten (“Transition Diet,” Mucusless Diet Healing System [MDHS])

All fats are acid forming, even those of vegetable origin, and are not used by the body. You will like, crave and use them only as long as you can still see mucus in the ‘magic mirror’ (“Destructive Diet of Civilization,” MDHS;).

One of the things that sets Ehret apart from allopaths and naturopaths alike, is his assertion that the human body does not need, or is unable to use, fats and proteins of any kind. He explains that

high protein foods act as stimulation for a certain time, because they decompose at once in the human body into poison (“High Protein Foods” MDHS).

I do have experience eating avocados. When compared to my long stints of living mucus-free on grapes and berries, or oranges, avocadoes are very stimulating and do leave behind slimy residue. I was able to see why many rawists gravitate toward them. I would certainly not eat avocadoes alone without a salad or condiments (garlic/onion powder, lemon juice, etc.). I agree with Ehret’s recommendation that if fats or protein is craved, a mucus-lean meal may be used. Avocadoes could be a part of such a meal. But, it is best to stay away from them for many reasons.

In the past, I’ve conducted observational/boiling experiments similar to Ehret’s (see below) on some of these foods to see what kind of residues would be left behind. As observed by Ehret, grapes, dates, etc., leave behind a mucus-free syrup/pap that does not smell bad, or become slimy. Yet, I found that masticated nuts or avocados do become slimy, smelly, and leave behind a sticky film. Ehret explains that “the waste from protein and starchy foods is STICKY (MDHS; Magic Mirror).” This seemed to be consistent with all of the ‘fatty’ fruits I examined. This showed me that such items do not burn away clean, like grapes, but leave behind obstruction that, if not eliminated, can turn to mucus/uric acid.

    Hello, thank you so much Professor Spira and all the people working on this page.
    I loved it…I have been Ehretist since 2009 and I had a few doubts and lacked the newly updated info that Prof.Spira gave us and a little more detailed info on what is mostly questionable by people when
    it comes to fats and protein.
    I became pregnant after a year and half following the diet and I had twins. Throughout the whole pregancy I followed it religiously and I was able to have wonderful healthy twins…boy and girl.
    Now it has been a struggle to deal with family, friends, docts. etc…opinions about what I should feed them. Protein and Fats is what they insist. so much oh…also calcium since I don’t like to feed them cow’s milk. I also breastfed them for almost 2 full years. It was supper hard but it is worth it. THey are so strong and healthy. THey have incredible strength but the girl is more to the skinny look and doctrs were insisting on reinforcing milk like pediasure, and she almost died when I gave her that, because she became clogged up immediately…

      Plantains are starchy, not sweet, and potentially mucus-forming. People often need to cook and season them to make them palatable. However, very ripe bananas are mucus-free and need no other preparation or condiments.

    Hello Prof.Spira,

    I don’t understand. I thought all the nuts, including peanuts are mucus-free and have eaten regularly. Because, Doct.Arnold said in his book that all the nuts are mucus-free. Now, I see that peanut is like legume, mucus-forming.

    Can you make this clear please ? Does nuts create mucus ?

      Greetings Bayram! Reread the ‘Fatty Fruits and Ehret’s Nut Contradiction’ section. I include quotes from the Mucusless Diet and Rational Fasting that expose the ‘nut contradiction.’ As I explain “to be clear, nuts are mucus-forming. But why was this statement made [saying nuts are mucusless in one place and mucus-forming in another]? There are several explanations for this, but the two main ones are that 1) in comparison with meat, nuts are virtually mucus-free, and 2) that Ehret’s editor Fred Hirsch took editorial liberties during the assemblage of the book as we know it and may be responsible for the mishap. Many of these changes, or contributions, can be easily identified.” As Ehret says,fats of any kind are mucus-forming and not part of natural human diet. Ehret says that nuts may be used during the transition “sparingly” in the winter time. But overall, it is best to get away from them and not think that you will be able to eat them for long periods of time without issues of cellular constipation. This can also be self evident. Consider masticated nuts vs. grapes. If heated and left to sit, the nuts will eventually become slimy and thick, while the grapes and other mucus-free items will not. They will burn clean away with no slimy residue.

      Greetings Luca. Please understand that instances of ‘thru’ are used as direct quotations from the works of Prof. Arnold Ehret. Large portions of this post are direct excerpts from his Mucusless Diet Healing System. With that said, ‘thru’, although today considered informal or archaic, is found in the dictionary as a possible alternative spelling for ‘through’. Interestingly, linguistic reformers a century ago even made efforts to have ‘thru’ be the official spelling of the word.

    I’m a serious recreational weight lifter.
    I’m not a 100% vegan. I still eat fish occasionally but no red meat, poultry o avocado’s. I eat once a day after 4 pm and no later then 6pm. I also sun gaze.
    When one sweats from working out. Doesn’t the body eliminate the mucus through the sweat and bowel movements?

      Greetings Lionel! Most people are alarmed by the amounts of waste they have sitting in their colons when they start to do regular enemas and transitioning toward a mucusless diet. Especially the BLACK SLUDGE! I only had it come out once toward the beginning of my transition, but it was one of the craziest things I’d ever seen leave my body. But as Ehret says, it has be come “normal” for humans to walk around with this waste inside us for years. As far as I know, mucusless detoxification is the only way to really eliminate the residue of uneliminated, unnatural food substances that we have been carrying around since childhood.

    good diet 75% raw, I do crave chewing
    something that happened after giving
    up smoking many, many years ago. And
    by chewing I mean toasted Ezekiel bread
    w/butter. how can I transition and not set myself up for failure.

    I have been carrying the Hepatitis C virus for the past seven-and-a-half years and suffer from chronic constipation, sticky bowels, violent belching and abdominal bloating. My gall bladder was removed in 2008, and I had undergone three major abdominal surgeries during my teens to get rid of cancer. I am 51 years old today. Dear Doctor, can you please guide me through a diet so that I can at least feel better and protect my liver and other organs, even if i do not eradicate the virus altogether?

    Hello there!

    Ive been meaning to ask for some time now if cooked tomatoes are acidic? Like if you made a tomato soup or tomato sauce in a pot.

    I would love ideas for soups as I live in a cold climate.

    I look up to you for your work and help. I have found the things you write about to be true. Ive been on a high fruit vegan diet for 1 1/2 years now and about half way in, while I was still eating lots of whole food cooked carbs, I began to become ultra sensitive to foods. I’d automatically get a stuffy/runny nose while eating foods from the mucus forming lists, including from potatoes. Rice made me have to blow my nose it was so bad and the next morning, after eating these foods, I would feel ill for a few hours; tired, crusty eyes and strep feeling throat, congestion. And this directly occurred every time I ate a food from those lists. The only thing I have no issue with is coconut and have a little coconut milk in a smoothie.

    Don’t like mucus in my intestines but you can’t just live on limited fruits and leaves.. But hey, I know a better way not to get mucus in your gut! Try to live on air alone! Go into the forest and simply breathe the whole day, this way you get all the nutrition from the oxygen and don’t even trash your body! I’m going to write a book about this, make a own website and call myself Dr. Rick, founder of the Air free diet :) No seriously, what do u eat on a day or a week Mr. Spira?

    In the book, the Berg’s Nutrition table, it list milk, white potato and sugar cane as acid-binding foods. But I thought these are mucus forming foods (bad foods)? How can they be acid-binding?
